Easy Pumpkin Pie Cookies Kids Can Make

These easy pumpkin pie cookies kids can make start with a basic sugar cookie dough. After baking, the cookies are decorated with royal icing to give them their cute and colorful Thanksgiving appearance.
Cooking with kids is a great way to teach them how to follow directions. Whether the directions involve mixing, stirring, measuring, or baking, it's all helpful practice for their young minds! The shaping, cutting, and decorating will help them develop fine motor skills and hone their dexterity. To decorate, they will need to tap into their creativity. And when it's all done, their reward is quick and delicious! It's an ideal parent-child activity. So grab your aprons and heat up your oven. We have some baking to do!
Ingredients (Basic Sugar Cookie):
225 grams / 2 sticks unsalted and softened butter
165 grams/ 1 1⁄2 cups confectioner’s sugar
1 large egg
2 1⁄2 teaspoon vanilla extract
385 grams/ 2 3⁄4 cups all purpose flour
1 teaspoon salt
1⁄2 teaspoon baking powder
METHOD
In a bowl of a stand mixer, add the softened butter and the confectioner’s sugar and mix until combined with the paddle attachment. (Don't have confectioner's sugar? Try making your own!)
Add the egg and the vanilla extract and mix until well combined.
In a separate bowl mix the all-purpose flour, baking powder and salt. Add it to the butter mixture and mix until it does not stick to the sides of the bowl.
Refrigerate dough for 15 minutes. Roll it out on parchment paper or on a silpat to about 1⁄4 inch thick. Use flour on your rolling pin in case it sticks to the surface.
Cut cookie into a pie-shaped circle, then cut the circle into 8 even “pie pieces” or triangles. Freeze for a little bit.
Bake at 350 degrees Fahrenheit or 180 celsius for 9-10 minutes.
Take the cookies out of the oven. Use a fondant smoother or a spatula to flatten the cookies in case they have some bubbles.
Cool the cookies on a wire rack.
Royal Icing
2 pounds confectioner’s sugar
5 tablespoons meringue powder
2 teaspoons of almond extract
1⁄2 – 3⁄4 cups water at room temperature
1 tablespoon corn syrup
food coloring
METHOD
Add the confectioner’s sugar and meringue powder into the mixing bowl of a stand mixer.
Mix the almond extract with half of the water.
Add half of the water with the almond extract and corn syrup into the confectioner’s sugar mix.
Mix. Add more water until you get a thick, honey consistency.
Mix for about 5 minutes at medium speed until fluffy consistency.
This is a firm consistency royal icing.
Now it's time to decorate! Separate icing into a number of different bowls or icing bags. Use the food coloring to make orange frosting, brown frosting, and any other color you like! Now smooth the orange icing over the cookies. Use a piping bag and a spiral piping technique to make the brown crust. Add a dollop of white frosting for the whipped cream.
